Our family loves Mexican food. We love the flavors, the beans, the cheese — it’s all so good! So this Mexican casserole is a favorite in our home. It’s easy to make and doesn’t take long to bake. And because it’s so tasty, it doesn’t take long to eat either!

Ingredients
  • 1 lb ground beef
  • 1 can chili beans
  • 1 10 oz bag tortilla chips, crushed
  • 1 can diced tomatoes with green chilies
  • 1 onion, chopped
  • 2 cups cheddar cheese, shredded
  • 1 pkg taco seasoning mix
  • ½ cup water
  • 1 can cream of chicken soup
Instructions
  1. Preheat oven to 325.
  2. In a large skillet, brown meat and drain off fat.
  3. Stir in beans, tomatoes, onion, taco seasoning, soup, and water.
  4. Simmer over medium-low heat until everything is well combined and heated through.
  5. Grease a 9×13 casserole dish.
  6. Put down a layer of crushed tortilla chips, followed by a layer of the meat/bean mixture, then half of the cheddar cheese.
  7. Repeat layers.
  8. Cover with foil and bake for 20-30 min, or until bubbly.
  9. Let sit for 5-10 min before serving.
