Have you ever tried roasted tomatillo salsa? Are you familiar with tomatillos?  They are the little green vegetables that looks like a tomato but has that distinctive papery skin.  Absolutely packed with nutrients, and, oh my, how delicious they are. If you are a fan of Mexican cuisine then you have probably enjoyed them in salsa verde, perhaps without even realizing what you were eating.

Our family learned how to make a fabulous, EASY, homemade roasted tomatillo salsa and wanted to share it with the BAM community.  It has become our absolute favorite accompaniment to most any meats and is what we keep on hand to add to avocados for a quick, fabulous guacamole.  It’s one of those recipes that we make so often, we don’t even use a recipe, if that tells you how beloved it is at our house.

So, from our home to yours, Roasted Tomatillo Salsa.

Roasted Tomatillo Salsa
 
Ingredients
  • 6-8 fresh tomatillos
  • 2-3 garlic cloves
  • 1 small onion, rinsed and diced
  • 1-3 chipotle peppers in adobo sauce (depending on heat desired)
  • ½ cup water (adjustable depending upon how juicy your cooked tomatillos are)
  • Mexican oregano or fresh cilantro, depending on availability in your region
  • salt to taste
Instructions
  1. Place tomatillos and garlic cloves on rimmed baking sheet.
  2. Broil until browned on all sides (turning over mid way).
  3. Add to blender jar, making sure to include juice from the pan. Add onion, desired amount of chipolte peppers, and water.
  4. Blend until consistency of salsa.
  5. Season to taste with Mexican oregano and salt.
Notes
Fantastic accompaniment to meats (flank steak, salmon, chicken, etc) fried/scrambled eggs, topping Mexican dishes, adding to avocados for a quick guacamole, and with chips or even just a spoon!

 

I have to warn you, once you experience how easy this is to make AND how delicious it is with fresh ingredients, jarred salsa may never be the same.
